Purple eggs and vulgar dogs

Really didn't have much interesting stuff these past couple of days. I mostly revisited my old favorites and just switched them up a bit here and there.

As usual, Sunday eats are always boring and redundant. I brought some veggies and roasted winter squash to church, got home, had a big bowl of yogurt with apples, and then baked up some sweet potatoes:

Had four of these knobbly goodies! Ever since I discovered how these sweet potatoes get intensely caramelized inside when baked, I've been obsessed with these! Check out the inside:

All golden and nutty-flavored, nothing like the regular orange sweet potatoes. The flavor of this particular breed is way more intense and roasty and toasty (If you get what I mean...)

Then for dinner I was craving eggs since I didn't have any the entire day, so whipped up the familiar omelette with shitake mushrooms, green bell peppers, red onions, scallions, and a slice of American cheese. This time though, I replaced the usual otahs with 2 chicken franks.

I've always avoided hotdogs because of all the addictives and preservatives they put in there, but for some reason I saw these in the supermarket and suddenly I had to have them. Screw the additives and weird starchy stuff they mix in there- I can afford to eat something less healthy once in a while.

Today for breakfast I revisited my old favorite...pumpkin oats!

Mmm...It's so comforting and delectable any day, whether cold or hot! I did not use canned pumpkin, because it is freaking expensive here in Singapore, so I used the leftover pumpkin that I had baked yesterday.

I much prefer it this way, so that I can enjoy little bites of pure pumpkin pieces with the oats, instead of being all completely blended in. You should try it this way, it's so much richer in texture and taste!

For lunch, I decided to take my own spin on the Spanish tortilla...which is basically a potato-onion omelette. I used purple potatoes instead of regular potatoes just for fun (come on, it's purple! How cool is that?).
First I fried up some sliced onions and diced pre-boiled purple potatoes in the frying pan with some garam marsala. Then I mixed it into an egg mixture of 1 whole egg, 2 egg whites, s
&p, and Italian parsley, then dropped the whole thing back into the frying pan. Voila~

It wasn't as thick and fat as a true authentic Spanish tortilla should be. I should probably have added one more egg. But absolutely delicious nonetheless!

I had added that garam marsala at the last moment on a whim, and it really spiced the whole dish up! Yum!

I enjoyed this dish with some veggies, a bowl of yogurt with chopped apples and cinnamon, and a slab of cucumber-chive cheese spread.

Each time I dug into the eggs, I dipped the fork into the cheese first...I really liked the contrast of the cool, tangy cheese with the hot, savory eggs and potatoes...

And for afternoon snack:

Haha, sick of sweet potatoes yet? Not me!

For dinner I was craving eggs and hotdogs again, so had the exact same thing as last night, but this time added garam marsala into the eggs again!

I am really liking this spice! It was a total impulse buy and I spent more than I would have liked on it, but now I am browsing online looking for recipes that incorporate this spice...Anyone have any good ones? I would really really appreciate it!

Is it just me, but do hotdogs just look a tad bit...vulgar to you? Tee hee!
Well, hope all of you enjoy your week!

Baked sweet potatoes are the best!! I can eat it for dinner, but my family makes fun of me and call it "famine" food, because back in the days, only the poor eat them.
