Perfecting a slightly flawed dish

I've noticed...that I spend so much money on FOOD! Like I go food shopping every single day...spending like practically SGD $20 per day! Today was one such expensive example:

1) Basket of bananas from local fruit stall: $1
2) NTUC trip: $19:15
- Alpen bars: $6.95 (!!)
- Loaf of high-fiber Sunshine bread: $4.20
- can of tomato puree: $0.97
- tub of yogurt: $5.50
- 4 small sweet potatoes: $0.85
- 2 dragonfruits on sale: $0.70
3) 1 kg (2.2lbs) bag of oats from local baking supply store: $4.10 (the cheapest I can find)
4) A large winter squash from outdoor vegetable market: $1.50
5) 5 kiwis from local fruit stall: $2.00 (cheap, cheap~)
6) A packet of garam marsala from local Malay stall: $2.00 (totally regretting...feeling pressured to cook Indian...total impulse buy!)
7) Rush last-minute trip to NTUC for cottage cheese: $3.80

Grand total: $33.55!!!!!

Holy moly...And that's just on groceries! How much do you guys spend on food each day?

Anyway, pretty unexciting meals today...After that slight disappointment with the yolks of my eggs on toast creation a couple of days earlier, I decided to recreate that dish for lunch today. The only thing different I did was:
  1. I added some red bell peppers and scallions...so much more fragrant!
  2. drenched the pieces of bread in an egg white and almond milk mixture before layering them onto the dish
  3. Left out the cheese spread
  4. Left out the egg yolks and only added them when the egg whites were almost set in the oven
Here it is out of the oven...


Also with a tablespoon of cucumber-chive cheese spread on the side since I didn't slather it on the bread itself. Much better this way!


The added red bell peppers and scallions really brightened up the whole dish! Red, green, purple, white, brown, yellow...How pretty and colorful!


And the yolks were absolutely perfect! It oozed out gold nectar and soaked the bread with its savory goodness...just the way I like it! (that's the way, uh-huh uh-huh, I like it, uh-huh uh-huh~) This dish has officially been added to my ultimate go-to comfort meals...

And after-lunch "dessert"= frozen plain yogurt blended with frozen chopped apples and cinnamon!


The same combo I usually have, except blended into a creamy texture! So cool and refreshing...Yum!

I had a church meeting tonight, so dinner was quick and simple:


Cooked cabbage and baked sweet potatoes and a small piece of pumpkin...


And a tub of cottage cheese with strawberry jam...


I really liked the sweet potatoes baked. I usually have it steamed, but since I was roasting pumpkin, I threw in the sweet potatoes as well to save electricity, and the result was fantastic! The outside was charred slightly (love!) and the inside was sort of caramelized, so that it tasted exactly like hot roasted chestnuts...Definitely going to bake all future sweet potatoes in the future! I'll never be satisfied with regular steamed again!

Oh and unpictured is a single glorious durian pastry puff that I had during the church small group...Just think basic cream puff...but stuffed with the richest, creamiest, most natural durian flesh...I was in heaven. I could have had another, but ED suddenly reared its ugly head and reminded me of the high number of calories each puff contains. Damn it.

Well now I'm chowing down a HUGE bowl (1 cup oats dry) of durian-flavored oatmeal to compensate...And trying not to get too anxious about tomorrow...Because...big news here (at least for me)...............I'm having PASTA tomorrow! EEEE!!! Pasta is like one of the biggest fear food ever, but I recently bought a packet of wholemeal spiral pasta and am planning to eat that tomorrow...Must stay strong and conquer this stupid fear foods...Wish me luck everybody! I spend a lot at the grocery store too...we're definitely food lovers!

I spend waaay to much at the grocery store. Today was $60, and all I got was some vegetables, yogourt, and cottage cheese - clearly I need to learn how to budget. Even when I buy mostly cheap stuff like LENTILS I manage to spend too much money!

Your food looks really delicious today, by the way! This is the first time I've ever been on your blog and I'm excited to look through your posts.

that egg dish looks really colorful and exciting, oh and that dessert sounds *mwah* perfection, creamy apple and cinnamon...yum!
I love sweet potatoes baked too, especially the skins I'm obsessed with sweet potato skins (is that weird??) Good luck with your pasta tomorrow I'm sure it'll be fantastic!
