“Eggddicted!”

Can you have too many eggs? As you may have noticed, I consume up to 6 eggs a day. It’s a surprise I don’t have eggy smells reeking out of my pores! I try to obtain other protein sources, but still prefer eggs the most. If I don’t have at least one meal based on eggs, I go into some kind of “egg-withdrawal” in which nothing satisfy me unless I can bite down on some good ol’ omelet! I wonder if there is such thing as an egg-addict…What do you guys think? Nutritionally-wise, do you think I’m overdosing on eggs? But do keep in mind that I am a recovering anorexic and am trying to gain…so it shouldn’t really matter, right? Who’s the nutritional guru here?

Anyway, yesterday was another eggy day…but mostly because I had church and I just needed to pack something fast and simple and didn’t want to have to think too much about what to prepare. But first, let’s talk breakfast…

I am really liking overnight oats. I woke up pretty late yesterday, so did not have the time to cook up oats. Thank heavens I had leftover cooked steel-cut oats prepared for me in the fridge! To minimize time, I didn’t have a separate fruit bowl, but dumped all my daily fruits into the cold oats, with about a cup of plain yogurt, a few drops of vanilla, a splash of almond milk and a dash of cinnamon. Here’s my quick and easy bowl of overnight oats:

It was too bad I had to scarf this all down in a hurry, because it was quite cool and refreshing and interesting and delicious, with all the mix of citrusy and sweet fruits, the tangy yogurt, the smoothness of the milk, the grittiness of the oats…

I decided to split up my lunch into two: One in church, the other at home when I got back from church. For lunch #1 I just packed a quick two-egg scramble with onions. Here’s the ugly picture:

I forgot to add in the Parmesan cheese! It was still good without, but a sprinkle of cheese makes a whole lot of difference.

Then I went grocery shopping, and bought a case of 30 eggs!!! Yes, I finish this case in a week. Sunday is my official “buy eggs” day. And I also bought some veggies and fruits, and also a big pack of chicken cocktails! Sounds so fancy, but they are just basically mini chicken hotdogs. Soooo cute though!

Dinner:

Cooked broccoli and cauliflower, an omelet with cheese, mushrooms, bell pepper, and onions, and seven little fried chicken cocktails, with the most fabulously spicy chili sauce on the side.

Eggs and hotdogs…I am such a breakfast person. Something tells me I’d flourish food-wise in Britain…

Today, amazingly, I did not have eggs for lunch. I wanted to, but I was becoming too comfortable with eggs and needed to challenge myself with something new. But before I share my lunch, here’s a shot of my loooovvveee~ly bowl of pumpkin oats for brekkie!

I just love having that little chunks of orange flecks mixed with the rolled oats! Since I used pumpkins that I had roasted previously in the oven, this bowl of oats was infused with the oven-roasted fragrance and flavor that canned pumpkin can never bring!

I discovered a can of sardines in tomato sauce in the pantry some days ago, and have been meaning to have that in a sandwich. So for lunch, I had spicy tomato sardines on toast. This is what I did: I chopped up half an onion, and mixed it with the sauce from the sardine can, more tomato puree, parsley, salt and pepper, tabasco, lime juice, and sweetener to taste. Then I flaked up the sardines and mixed it into the sauce. And that’s it! Easy as pie. How do you guys eat your can of sardines?

I also made a “pizza” toast. I just slathered a piece of bread with tomato sauce, topped it with sliced hotdogs, and sprinkled liberal amounts of Parmesan cheese on top, then popped it into the oven until the cheese got brown and fragrant.

Even without a single egg, I thoroughly enjoyed my lunch and was sad when I swallowed the last bite of toast. But I was full and very satisfied!

I think you all already guessed that I had sweet potatoes mid-afternoon again, so I’ll spare you the details and unnecessary photo of it. Only that it was as good as ever.

You didn’t think I’d miss out of eggs today, did you? Haha! That lovely shiny yolk should be categorized as a jewel on its own! Well, so starts a new week and hope all of you have a great, productive week!

Hm, I don't really think that there is a problem with eating a lot of eggs! I usually have at least one a day. There have been lots of studies to show that eggs really are healthy, and the cholesterol in them has no effect on the cholesterol in your blood. So eat all the eggs you want!

Ah! Sardines. I love sardines. Admittedly, though, I usually eat those the same way you do - mashed and on some thick wholegrain toast!

Just replace the haddock with sardines!

Oh! One thing. There's a term known as "eggbound" - the only real issue I can think of from eating a lot of eggs is they cause constipation in some people. >_> But if you don't have trouble with that then no, no worries!

Haha I think eggs are good for you! Its your body realizing that its getting the nutrients it needs. Eat up :) its what your body needs.
