Don't mess with the classics

A note on that potato pancakes...I finished it last night with some cold homemade applesauce, and oh my God. You've gotta try it!


Anywho...I had every intention to be creative in the kitchen again today...Was planning on having corn chowder for lunch, and even got around to shopping for the ingredients... but as I was actually preparing it, strangely I could feel my heart wasn't really into what I had prepared to make. It was still fun cooking, but I wasn't actually looking forward to eating it!

So I literally put down my knife, took a pause, and tried to listen to my real cravings...and my heart, stomach, and taste buds screamed out, "Runny egg yolks! Baked potato!" So that's what I had:

I baked a medium potato in the oven for about 45 minutes until hot and golden, and slit it crosswise to release the glorious steam...


And then plopped a spoonful of cucumber-chive cheese spread on top...


And finished off with a sprinkle of salt and a whole poached egg!


The combination was fantastic: You had that waxy, warm starchy base of the baked potato, livened up by that tang from the cheese, moistened with the soft egg whites, with the savory gold egg yolk seeping into the whole mixture...


The classic combo: cheese, potato, eggs...So amazingly comforting and delicious...Nobody messes with the classic combinations. Why tinker with what's already perfect?

I also had a soft-boiled egg which I didn't bother to picture, and a nice cooling salad...


With a soysauce/vinegar/wasabi sauce for dipping...


And of course a bowl of plain yogurt with apples and cinnamon.

Lunch was yummy yummy in my tummy! (I can't believe I just said that)

My afternoon snack was quite brilliant, if I say so myself. Remember the pureed frozen bananas I had for snack yesterday? Well, today I thought, I'll bet frozen pumpkin would work just as nice too... And I was right! I froze up some already roasted pumpkin in the freezer, and blended them up with a tiny bit of frozen bananas as well. Instant pumpkin ice-cream! I am really liking this ultra-nutritious "ice-cream"!

Doesn't it have a gorgeous color? With a sprinkle of cinnamon, HEAVEN~

After snack I actually fell asleep for a nap while reading, and when I got up, it was already 8:30 pm! I was still feeling bleary and stupid from my nap so did not bother coming up with anything new...Yup, the same ol' thing for dinner:


Omelette, veggies, otahs. But I added a little something more, since I've been trying to amp up my daily calorie intake more and more each day. I soft-boiled an egg. Yes, this is like my sixth egg of the day! Should probably have had a different protein, but I seem to be obsessed with runny egg yolks at the moment. Not too concerned about the cholesterol, ever since the cholesterol in eggs have been proven to be quite harmless...And besides, I eat enough oatmeal to counter-act all bad cholesterol!~

Oh, and those curious about that corn chowder I was planning to make...I did finish making it. This is the pot boiling and all the mise en place...



I just didn't eat it. Well, had a few tastes, and it was quite okay. Wasn't the creamy texture I'd imagined. Ack, have to coaxe Liwen and Wengang to help me eat it...

you are so creative, that pumpkin ice-cream idea is genius! That's the healthies version of an 'ice-cream' i've ever seen and I LOVE pumpkin so I must try it-thanks. Oh and baked potatoes are awesome
